*Key Area #3: Daily Operations* · Baking and decorating pastries and other desserts using a variety of different sauces, toppings and other items.
· Work with all culinary and F&B leaders to create exemplary culinary standards and an environment of continual improvement.
· Continuously creating and implementing new menu ideas with the Culinary Director.
· Ensuring all dishes are uniform and that established portion sizes are adhered per the specifications set out by Culinary Director.
· Responsible for the quality of all pastry items prepared in the kitchen and ensure standard recipes are being followed on a consistent basis.
· Recruiting, hiring and training of Pastry Kitchen staff.
· Ensure continual product quality control and procedures are maintained on a daily basis.
· Consistently checks food for taste, temperature, and visual appeal.
· Prevent the use of contaminated products in any phase of food preparation.
· Maintaining a clean and hygienic work environment.
· Minimize spoilage, waste, and over production with consistent procedures.
· Ensure all cleaning schedules, temperature records, opening/closing checklists are completed and recorded daily.
· Organize the kitchen and preparations in an efficient manner to cope with the daily restaurant covers.
· Monitoring inventory levels through regular inventory checks and placing orders when needed.
· Weighing and measuring ingredients.
· Operating a variety of kitchen equipment.
· Maintain all equipment and be sure it is properly handled and maintained by all culinary staff.
· Maintains a clean and well-groomed appearance in compliance with departmental and company dress code standards.
· Any other duties as assigned.
*Knowledge, Skill, and Abilities:* · Proven skill in baking, pastry preparation and decoration.
· Extensive knowledge of health and safety procedures for kitchens and food preparation areas.
· Excellent attention to detail.
· Exceptional time management skills.
· Ability to work autonomously, but also with a team.
· A food hygiene certificate or any food handling or preparation qualification.
· Ability to calculate costs and manage a budget.
· Must have strong knowledge of proper food service to include products, supplies and equipment.
· Comply with Idaho State Health and Wellness regulations.
· Ability to work effectively with all personality types.
· Ability to understand and carry out verbal and written instructions independently.
· Ability to perform basic mathematical calculations correctly.
· Ability to work weekends, holidays, morning, and nights.
· Ability to work in all weather conditions and temperatures to include inside and outside areas.
· Ability to perform light physical tasks, exerting up to 25 lbs.
of force on a frequent basis and up to 75 lbs.
